Chocolate of Modica PGI: With a typical grainy consistency and ancient Aztec origins, it is characterized by the particular so-called "cold" processing technique, that is, at a temperature of 45 °, which excludes the conching phase. Once in the handmade processing, the cocoa paste was placed on a half-moon flattened lava stone already heated, then it was mixed with a special cylindrical rolling pin made of stone, of different weight and thickness in relation to the processing phases up to the refining, called "Stricata". The strength of good Modica PGI Chocolate is undoubtedly in its simple and natural ingredients, in its characteristic graininess, the result of a consolidated processing technique.
